Sous Chef

Sous Chef required for 70 & 75m private yachts

This is a 4:2 rotational position

Start date 6th March 

This role is for a sous chef on a 4:2 rotation that will split their time between the owners 2 yachts. The plan is for 2 months on one and 2 months on the other, then 2 months on leave but the timings on each vessel will be flexible depending on travel itineraries, guest trips etc. Interviews will commence end of January / early February

The sous chef applying is a culinary trained professional that must be able to assist the head chef in all aspects of galley duties. They must take direction well, in addition to possessing the ability to plan well balanced, thoughtful menus and thoroughly understand and implement galley safety and hygiene. The sous chef will be able to independently provide crew meals and assist with preparation of guest meals at the direction of the head chef. The successful candidate for this position should have at least two years of similar experience in a super yacht galley or ashore in reputable hospitality environments.

Job Description

The Sous chefs are responsible for.

* Cooking for Crew and preparing guest meals, maintaining balanced healthy nutritious diets. Taking responsibility of dietary and Allergen requirements

* Responsible for any duties assigned to them by the Head Chef.

* Responsible for food safety, food storage / stock rotation.

* Food inventory management. Keeping track of stock levels.

* Provisioning, keeping within budget perimeters.

* Galley safety and maintenance. Keeping in line and up to date with cleaning and maintenance schedules.

Required Skills

* Knowledge of produce, seasonality and global availability. Ability to work with locally sourced seasonal produce.

* Experience in baking, bread making and patisserie

* Strong provisioning experience. Land based or at Sea

* Strong knowledge and experience of food safety and storage

* Strong knowledge and experience of nutrition, diets and allergies

* Organised, tidy, adaptable and continually creative.

* Punctual and adept in time management.

* Ability to take direction

* Attention to detail, administrative and pre-planning skills

* Ability to overcome seasickness

Minimum certifications required:

* STCW

* ENG1/Seafarers medical certificate

* Ships Cook COC

Preferred Certifications:

* B1B2 visa

* PDSD

This is a 4:2 rotational position

Salary $5500 – $6000 PCM DOE
